Preparation

Griddle/Plancha (or cast iron pan) 2-4 MIN.

Allow the mixture to thaw (≤ +7 °C) and form into balls of the desired size. Rub with a little oil and place on a hot griddle (alternatively a cast iron pan). Place a piece of baking paper on each of the minced balls and flatten them with a smash iron until the patties are approx. 3 – 5 mm thick. Depending on the thickness of the patty, grill it on both sides for about 1-2 minutes at high heat (sear it). Salt and season as needed.
